Valerie used 2 ½” strips that were precut across the width of the fabric, which she then cut down to approx 10" long so you could look at your layer cake and cut that down into 2 ½” strips.

Or just raid your stash and make a quilt that is completely scrappy.
The staggered brick look also adds interest and avoids having to match seams. Although you do have to pay attention and Valerie guides you though that too.
